Japanese Meat Quality


Wagyu is the representative type of Japanese beef. Its allure stems from its high quality fat (sashi) and flesh so soft it melts in your mouth. Famous Japanese brands of beef include Matsuzaka beef, Kobe beef, Yonezawa beef, Omi beef, Hida beef, and Tajima beef.

Two measurements are used to classify beef. The first is yield rate, which is a letter from A to C that assesses whether the proportion of lean meat that can be consumed is high or low. The second is meat quality grade, ranked from 1 to 5, which assesses "sashi and the degree of marbling," "complexion," "tightness and graininess," and "the color and quality of fat"). A5 is the highest classification given.

Famous Japanese pork brands include Kurobuta, Sangenton, Hakkinton, Tokyo X, and Agubuta.
Normally, loin and fillets are used for Tonkatsu (pork cutlet) while pork loin and shoulder are used for Shogayaki (ginger pork).
When purchasing raw meat, one should choose meat that is shiny with a greyish pink color.

Table egg

While eggs are not often consumed raw in other countries, in Japan eggs are sold with the assumption that they will be consumed raw. Proper hygiene management like disinfecting the shells is carried out for this purpose. Also, expiration dates refer to the deadline by which eggs can be consumed raw.
Ways to eat raw eggs include Tamagokake Gohan (egg over rice), Yakisoba, Tsukimi Soba (Udon), in which an egg is split onto warm Soba (or Udon).

Eggs should be stored in a cool dark place with good ventilation after purchase. Eggs should not be washed ahead of time (if there is dirt on the shells, wash directly before use). Storing the eggs with the pointed side facing down prolongs freshness.

Processed meat

Adding Japanese produced meat to Processed meat products is an easy way to make them delicious; for example, Jerky and Roast beef made from Wagyu; Bacon, Frankfurters sausage, and Salami made from Japanese Pork; and Tsukudani and Shigureni, which hold traditional Japanese flavors.

The allure of these types of item is that many keep for a relatively long time and they are easy to bring home as souvenirs.
